What is the difference between the fermented nepal momo machine and normal stuffed momo machine?

The fermented nepal momo machine is designed for making stuffed buns with fermented dough, which results in a soft, fluffy, and unsqueezed bun. The un-fermented momo machine, on the other hand, is designed for making stuffed buns with un-fermented dough, resulting in a denser texture. 

Texture: Fermented momo machines produce soft and fluffy buns, while un-fermented momo machines produce denser buns. 

Yeast activity: The fermented momo machine helps preserve yeast activity, resulting in superior texture and flavor. The un-fermented momo machine does not involve yeast fermentation. 

Dough out process: The fermented nepal momo machine uses a horizontal dough out leasing way and an auxiliary auger to assist in the dough out process, which protects gluten and prevents dough from heating. The normal momo machine does not have this feature. 

What if I need to process with two different stuffing when making Nepal momo?

Our momo machines have two types, single hopper and double hopper. You can check accordingly.

For fermented momo production, a dual hopper configuration is particularly important, as it allows you to maintain the unique flavors and textures of various fillings, such as leeks or fennel, which can be easily overpowered by other ingredients.

What is the ideal dough and water ratio for making Nepal momos?

Our automatic Nepal momo machine is versatile and can accommodate a wide range of flour-to-water ratios, from 1:0.45 to 1:0.55. The ideal ratio depends on your desired level of softness and the characteristics of your momo. For soft, leavened buns with high water content, we recommend a water ratio of 1:0.55. On the other hand, if you’re making non-leavened, yeast-free buns, a ratio of 1:0.45 is more suitable, as it helps preserve the natural flavor of the dough. 

How to operate the automatic Nepal momo machine?

-Mix the flour first, the flour: water ratio as 1:0.45  

-Put the prepared stuffing filling into the filling hopper. 

-Turn on the main power and adjust the filling and dough speed separately, and combine with the shaping control, you can adjust the momo weight easily.  

-The machine runs normally, and the beautiful stuffed nepal momos are ready.

We equipped with you 5 sets dough outlets for momo making with different weight range. When you need to produce different weight, beside adjusting forming speed, stuffing supply and dough supply speed, also need to change the dough outlet accordingly.
